Red Lentil Dahl Soup

6 Cups Water
2 Cans Diced Tomatoes
1 Large Onion Chopped
1 Can Coconut Milk
1 Lb. Red Lentils
1 Lb. Spinach chopped
1 Tbsp Lime Juice
2 Tbs Olive Oil
2 Tsp Sea Salt
2 Tsp Cumin Powder
3 Tsp Garlic Powder
1 Tsp Turmeric
½ Tsp Ground Cinnamon
½ Tsp Whole Peppercorns
In a large pot add olive oil and heat over medium heat. Add diced onion, sprinkle with sea salt and cook for 6 minutes or until becoming translucent. Add spices and stir until onions are coated about a minute. Add tomatoes, cocoanut milk and lime juice, stir to combine. After about a minute add lentils and peppercorns and bring just to a boil. Partially cover pot and lower heat to a simmer and cook for 6 – 10 minutes until lentils are tender. Add in chopped spinach and recover for about 4 minutes. Remove lid and stir in spinach. Adjust seasonings as desired and serve.
