Unsalted Butter
3 1/2 Cups High Quality Whipping Cream
3 Tbsp Ice Cold Filtered Water
In a food processor process the cream for 3 to 6 minutes on high until it gets chunky and separated. Once the solids form up you. Are good.
Strain the cream through a fine mesh sieve and put the solids back in the processor. Add the cold water and process again for 1 or 2 minutes.
Strain again to get as much moisture out.
You have made butter!
Tuna Melt
1-5oz can of Solid White Tuna in Olive Oil
1/4 Cup Mayonnaise
2 Tsp Dijon Mustard
1/2 Medium Celery Rib chopped finely
1/2 Shallot chopped finely
1 Sprig Dill chopped finely
Kosher Salt and Pepper to taste
2 1/2 Tbsp Unsalted Butter
4 Slices Thick Country Bread
4 Slices cheese like Gouda or Swiss
In a medium bowl shred the tuna and then add in mayonnaise, mustard, celery, shallot, dill and pickle. Season with salt and pepper and mix thoroughly.
In a 10inch skillet, heat some butter over medium heat until melted and bubbly. Add the bread in batches and toast for 2 – 3 minutes each. Do not let it burn! Flip and toast the other side.
Once all the bread is toasted spread 1/4 of the tuna mixture on each slice and top with cheese.
Broil on high until melted or use a torch to melt the cheese (way more fun).
Top with chives and serve!
